Babycorn Capsicum Stir-fry

Been away from blogging for a while. Insipte of the busy schedule with the little one at home, I made up my mind to post today. I happened to get a fresh batch of babycorn from our farm. The first half of the batch went into making Babycorn peas masala. I was thinking of different recipes to try with the rest of the batch.  This is a simple stir fry recipe I came up with which is mildly spiced.

20 minutes of your time and some basic ingredients from your kitchen will get you to this simple but delicious recipe.

What you will need:

Serves: 2
Cooking Time: 20 minutes
  • Babycorn - 8
  • Capsicum- 1
  • Onion- 1
  • Cumin seeds- 1/2 tsp
  • Red chilli powder- 1 tsp
  • Fennel powder- 1/4 tsp
  • Garam masala powder- 1/4 tsp
  • Salt- as needed
  • Oil- 2tsp

How to:

  1. Slice babycorn and capsicum into 1 inch thin strips. Slice onions lengthwise. Heat oil in a pan. Add cumin seeds. Let it splutter. Add onion. Saute for two mins. Add capsicum. Saute for two mins.
  2. Add babycorn. Add red chilli powder, fennel powder and salt. Mix well and let it cook in oil for 5 mins.
  3. Add two handfuls of water and cover and cook for 5 mins. Don't forget to stir in between. Add garam masala powder. Mix well and cook for two mins and switch off.

You can serve this as a starter or as a side with rotis or rice.

P.S :

  • You can add amchur powder for a tangy taste.
  • You can add paneer in the same recipe or replace babycorn with paneer.
